1911年に田村市郎氏が山口県下関で創立した田村汽船漁業部が起源。
1952年に戸畑工場で魚肉ソーセージの本格生産を始め、2001年には米国首位の冷凍水産ブランドのゴートンズを取得した。
食品と水産を両輪とする水産大手で、欧州と北米を中心に海外が売上の4割超を占める。
前身は共同漁業で、1937年に日本水産へ社名を変更した。
1988年にチリのサケ養殖会社を買収し、2005年に北米のKING&PRINCEを買収した。
2022年にニッスイへ商号変更。
クロスボーダーM&Aで水産・冷凍食品の事業ポートフォリオを広げた。
